Easy Breakfast Skillet
One pan, hot breakfast magic—right over the fire.
🛒 Ingredients
- 4 eggs
- 2 cups frozen or fresh hash browns
- 1/2 cup diced onion
- 1/2 cup bell pepper, chopped
- 1/2 cup shredded cheddar cheese
- 4 slices bacon or breakfast sausage, cooked and chopped
- Salt and pepper to taste
- 1 tbsp butter or oil
🔥 Instructions
- Heat a cast iron skillet over a campfire or stove and add butter or oil.
- Sauté hash browns, onions, and bell peppers until golden brown (8–10 minutes).
- Add chopped cooked bacon or sausage and mix well.
- Make four small wells in the skillet and crack an egg into each.
- Cover and cook until eggs are set (5–8 minutes depending on heat).
- Sprinkle cheese on top, cover again to melt. Serve directly from the skillet!
