Chipotle Grilled Chicken Tacos
Smoky chicken, warm tortillas, and endless toppings — this is campfire taco night done right.
🛒 Ingredients
- 1 lb boneless skinless chicken thighs
- 2 tbsp olive oil
- 2 tbsp chipotle in adobo, chopped
- 1 tbsp lime juice
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- 8 small corn or flour tortillas
- 1/2 cup chopped cilantro
- 1/2 cup diced onion
- 1/2 cup crumbled cotija or shredded cheese
- 1 avocado, sliced
- Optional: sour cream, salsa, or lime wedges
🔥 Instructions
- Mix olive oil, chipotle, lime juice, and spices in a bowl.
- Marinate chicken for at least 30 minutes or overnight in a cooler.
- Grill chicken over medium heat, 6–8 mins per side until fully cooked.
- Warm tortillas directly over coals or in a skillet.
- Slice chicken and build tacos with cilantro, onion, cheese, and avocado.
- Serve with lime wedges, salsa, or sour cream as desired.
