Chipotle Grilled Chicken Tacos

🛒 Ingredients

  • 1 lb boneless skinless chicken thighs
  • 2 tbsp olive oil
  • 2 tbsp chipotle in adobo, chopped
  • 1 tbsp lime juice
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • 1/2 cup chopped cilantro
  • 1/2 cup diced onion
  • 1/2 cup crumbled cotija or shredded cheese
  • 1 avocado, sliced
  • Optional: sour cream, salsa, or lime wedges

🔥 Instructions

  1. Mix olive oil, chipotle, lime juice, and spices in a bowl.
  2. Marinate chicken for at least 30 minutes or overnight in a cooler.
  3. Grill chicken over medium heat, 6–8 mins per side until fully cooked.
  4. Warm tortillas directly over coals or in a skillet.
  5. Slice chicken and build tacos with cilantro, onion, cheese, and avocado.
  6. Serve with lime wedges, salsa, or sour cream as desired.
