Dutch Oven Beef Stew
A hearty one-pot meal made for campfire comfort.
🛒 Ingredients
- 2 lbs beef chuck, cubed
- 2 tbsp vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 carrots, chopped
- 3–4 potatoes, diced
- 2 celery stalks, chopped
- 2 tbsp tomato paste
- 4 cups beef broth
- 1 cup red wine (or broth)
- 1 tsp thyme
- 1 tsp rosemary
- 1 bay leaf
- Salt and pepper
- 2 tbsp flour (optional)
- Optional: peas or corn
🥘 Instructions
- Preheat your Dutch oven over a campfire or medium heat.
- Brown the beef in batches; set aside.
- Sauté onions and garlic until soft.
- Stir in tomato paste, carrots, potatoes, and celery.
- Add beef, broth, wine, and herbs. Cover and simmer 1.5–2 hours.
- Thicken if desired by stirring in flour/water mix.
- Add peas/corn in the last 10 minutes. Serve hot.
🔥 Campfire Tip
Use 8–10 coals under, 12–15 on top of a 12" Dutch oven for even heat.
