Dutch Oven Beef Stew

A hearty one-pot meal made for campfire comfort.

Cook Time: 2 hours
Serves: 4–6

🛒 Ingredients

  • 2 lbs beef chuck, cubed
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, chopped
  • 3–4 potatoes, diced
  • 2 celery stalks, chopped
  • 2 tbsp tomato paste
  • 4 cups beef broth
  • 1 cup red wine (or broth)
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 bay leaf
  • Salt and pepper
  • 2 tbsp flour (optional)
  • Optional: peas or corn

🥘 Instructions

  1. Preheat your Dutch oven over a campfire or medium heat.
  2. Brown the beef in batches; set aside.
  3. Sauté onions and garlic until soft.
  4. Stir in tomato paste, carrots, potatoes, and celery.
  5. Add beef, broth, wine, and herbs. Cover and simmer 1.5–2 hours.
  6. Thicken if desired by stirring in flour/water mix.
  7. Add peas/corn in the last 10 minutes. Serve hot.

🔥 Campfire Tip

Use 8–10 coals under, 12–15 on top of a 12" Dutch oven for even heat.
