Easy Breakfast Skillet

One pan, hot breakfast magic—right over the fire.

🛒 Ingredients

  • 4 eggs
  • 2 cups frozen or fresh hash browns
  • 1/2 cup diced onion
  • 1/2 cup bell pepper, chopped
  • 1/2 cup shredded cheddar cheese
  • 4 slices bacon or breakfast sausage, cooked and chopped
  • Salt and pepper to taste
  • 1 tbsp butter or oil

🔥 Instructions

  1. Heat a cast iron skillet over a campfire or stove and add butter or oil.
  2. Sauté hash browns, onions, and bell peppers until golden brown (8–10 minutes).
  3. Add chopped cooked bacon or sausage and mix well.
  4. Make four small wells in the skillet and crack an egg into each.
  5. Cover and cook until eggs are set (5–8 minutes depending on heat).
  6. Sprinkle cheese on top, cover again to melt. Serve directly from the skillet!
